This fruity version stays true to its roots, using d’azcaron as the main ingredient instead of whole strawberries.

raw material:

  • 50 ml white rum
  • 20 ml freshly squeezed lime juice
  • 10 ml syrup (or 4 tablespoons sugar)
  • 1 cup raspberry or strawberry jam
  • Soda water (optional)

Prepare:

Make the syrup by placing four cups of sugar and two cups of water in a small saucepan. Turn the heat to medium-high and bring to a boil, then let it bubble until the sugar has dissolved.

Remove the syrup from the heat and allow it to cool. This will be more than you need for one cocktail, but the syrup can be stored in an airtight jar and will keep for several weeks.

Place remaining ingredients in a cocktail shaker filled with plenty of ice and shake well, then strain into a coupe or martini glass.

For a slightly lighter version, pour the cocktail into a whiskey glass with ice, add some soda water and give it a quick stir. As it says, garnish with a slice of lime or fresh raspberries or strawberries Express.
