On Friday, Dr. Anca Hâncu declared on Antena 3 that some foods can spoil in just 1-2 hours during a heat wave if not kept in the refrigerator, and even water should be kept away from prolonged exposure to the sun.

“In hot weather, especially during heat waves, food safety is essential because we need to know how safe it is to bring food to the beach, such as ham sandwiches, cheese sandwiches or tomato sandwiches”, says Anca Hâncu, a general practitioner. Asked how long the food from the book that we carry with us can be eaten, whether we are going to the beach or in the car, the doctor also talks about the two-hour rule for fruits, or even one hour depending on the temperature. The World Health Organization stipulates: “Both the World Health Organization and the US Department of Agriculture recommend that we eat food that has been at room temperature for a maximum of two hours. So we can’t keep the sandwiches for more than two hours. But they are stricter and tell us that if the temperature is above 32 degrees Celsius, as we have in Bucharest these days, the time should be one hour”, says the doctor.

“We must take into account that if we have a sandwich or a peach that retains its organoleptic qualities and which, in our opinion, is nothing but just as good, it is actually possible that it is contaminated with bacteria. Then we are at risk of turning into a foodborne infection that may or may not become a foodborne infection. In this case, we are talking about Clostridium, which can cause death if no intervention is made and it is a sensitive organism. We are also talking about salmonella, but also other enteroviruses that can subsequently cause fever, diarrhea and in any case ruin our holidays and our lives”, declares Hâncu. The doctor also says that food cooked at home should not be cooled for more than two hours.
Water for 5-6 hours Anca Hâncu recommends that during heat waves, water should not be kept in a cooler for more than 5-6 hours. “As for the water that we carry with us during hot weather, it is best to try to carry a cooler bag with us and store the water in this cooler bag. If possible, separate the food from the water, because we go to drink water more frequently and always open these bags. But even in a cooler bag we cannot keep water and food for more than 5-6 hours. Therefore, we cannot store these foods from morning to night, because the temperature is still rising and especially the water is no longer safe”, says Dr. Anca Hâncu.
