Ragnheiður Stefánsdóttir is a peninsula woman with skin and hair who maintains the social media Appetite on TikTok, Instagram and Facebook, sharing various delicious recipes.
“For as long as I can remember, I’ve been interested in hanging out in the kitchen, and there’s nothing more fun than hosting a coffee party or having guests over for dinner. I take it very seriously to take care of my health by doing various types of exercise, and I’m also very careful about what I eat, as I choose to cook and bake everything from scratch. It’s simply more delicious and enjoyable, although there are exceptions sometimes,” says Ragnheiður.
Besides spending a lot of time in the kitchen, Ragnheiður is also passionate about horseback riding. “I’ve been riding since I was 13, it’s my life, my love and a great way to spend time with my family and friends. It’s a fun sport and very rewarding. My dad and I have five horses at home so there’s a lot to do. So I just finished The Rider 2 this spring and it was very stimulating and really fun to study and I would definitely recommend it to anyone who rides horses,” she adds.
Ragnheiður usually goes to the stables with tasty treats and invites his friends over for coffee. “For example, I like to try different types of rolls, either fried or with various fillings. The ‘cinnamon rolls’ with juicy filling and cream cheese frosting are a favourite. They are soft and tasty, and the filling is juicy,” says Ragnheiður, who shares such a recipe with readers of matarvefs mbl.is.
“Cinnamon” Rolls with Cream Cheese Frosting
Roll out the dough
raw material:
700 g flour
1 ½ teaspoons salt
4 tsk. þurger
80 g sugar
4 dl warm water (or even more)
1 dl mayonnaise
Pour milk or cream into the mold (the amount depends on the size of the mold, assuming the milk covers 1/4 of the mold)
filling
raw material:
320 g room temperature butter
225 g brown sugar
4 tbsp. cinnamon
Cream Cheese Frosting
raw material:
60 g butter
4 dl powdered sugar
5 tbsp. cream cheese
2 tsp. vanilla drops
method:
- Place the dry ingredients for the dough in a mixing bowl and mix a little with the hook.
- Add water and mayonnaise and mix with the hook for about 1 minute. 3-4 minutes. If the dough is a little wet, add a little flour and continue kneading for a while.
- Let rise for 30 minutes. Then remove the dough from the bowl and roll it out.
- Prepare the filling by mixing butter, brown sugar and cinnamon in a bowl. Spread 3/4 of the filling on the dough, roll it to a certain length and cut into rolls of appropriate size.
- Heat oven to 180 degrees with fan.
- Grease the inside of one large or two smaller fireproof moulds with about 100g of grease. Fill 1/4 of the filling, place the rolls on top and pour the milk or cream into the moulds so that it covers 1/4 of the moulds. Then let the rolls rise for 30 minutes.
- Bake the rolls for approx. 20-25 minutes or until golden brown. If the rolls start to darken, it is best to line the rolls with aluminum foil.
- Let the rolls sit for a while after removing them from the oven.
- Meanwhile, prepare the cream cheese frosting by mixing the butter, powdered sugar, cream cheese and vanilla in a mixing bowl and beating for approx. 1 min. 3 min. Allow to cool before spreading the frosting over the donuts.
“If there are any coils left, i.e. if you used a fairly small ovenproof dish, I recommend that you place the remaining rolls on baking paper and let them rise there until the “cinnamon” roll cakes are ready. They will rise very well after this long period of time,” says Ragnheiður.
“After the ‘cinnamon’ roll comes out of the oven, heat it to 220 degrees and then puff on the remaining roll and bake for about 9-12 minutes. It’s a good idea to freeze the inedible rolls in a bag, they thaw quickly and are very delicious,” she adds.
