Prepare:
Toss the wings in a marinade of tomato paste, cracked pepper, lemon juice, vinegar, honey, salt and pepper. Leave it in the refrigerator overnight, or at least an hour if you’re in a hurry. While the wings are resting, drain them and place them on a rack in the oven with a tray lined with aluminum foil underneath them. Bake the wings for 30 minutes, then turn them over and bake for another 10 minutes. While the wings are baking, make the sauce. Chop the onion and simmer it in melted butter. Add the chicken stock and the remaining marinade and bring everything to a simmer. Finally, when the sauce is ready, add the chopped parsley. Pour over the wings or serve the sauce on the side.
