raw material:

For 6 jars of 300 g:

– 1 kg peaches
– 150 ml semi-dry white wine
– 500 g sugar
– A vanilla stick
– A spoonful of lavender flowers

Prepare:

Blanch the peaches briefly in boiling water, peel, halve, pit, cut into small slices and place in a large pot, sprinkle with sugar and drizzle with wine. Cut the vanilla stick lengthwise, remove the seeds, mix with the peaches, cover and let sit for three hours until the peaches start to release water, then mash. Add the lavender flowers and cook over moderate heat, stirring constantly. When it boils, cook for another five minutes, stirring all the time. Remove the foam and immediately pour into a heated jar, cover and let sit for 15 minutes.
