4 medium zucchini
300g minced meat
1 large onion
2 tablespoons rice
2 tablespoons tomato paste
1 cup olive oil
1 cup water
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon cayenne pepper
1 teaspoon dried mint
1/2 cup chopped parsley
1 cup yogurt (for serving)
2 cloves garlic (for serving)
Prepare
Wash the zucchini and cut off the ends.
Cut the zucchini in half and scoop out the hollow inside with a spoon. Sprinkle a little salt on the outside of the zucchini and set aside.
Chop onion and mix with minced meat.
Rinse the rice and add to the minced meat mixture.
Add 1 tablespoon of tomato paste, salt, black pepper, cayenne pepper, dried mint, and chopped parsley and mix well.
Add the prepared filling to the carved squash. Be careful not to overfill the squash as the rice will expand while cooking.
Place zucchini side by side in a large pot.
Prepare a sauce by mixing 1 tablespoon of tomato paste, olive oil and water. Pour this sauce over the zucchini.
Cover and simmer for approx. 30 – 40 min., until zucchini is tender.
Place yogurt in a bowl, add crushed garlic and mix.
Place the cooked zucchini on a plate and drizzle the garlic yogurt over top.
