While almost every small Australian town has a local bakery, regional Victoria isn’t the first place you’ll come across a bakery specialising in Asian fusion cuisine.

But in Kyneton, about an hour’s drive north of Melbourne, Country Cob Bakery has become one of the country’s most acclaimed bakeries, with award-winning pies showcasing Asian flavours.

Owner Chan Khun immigrated from Cambodia 20 years ago and bought the store in 2015 with his brother Ryan.
