West Indian King Cake (1)

raw material :

2 pre-rolled puff pastry cases

25 cl milk

1/2 vanilla pod

3 egg yolks

1 whole egg (+ 1 brown)

110g sugar

15g flour

60 g shredded coconut

60g soft butter

1 tablespoon rum

Preparation of the pastry cream:

Bring the milk and the halved vanilla pod to a boil.

Mix 3 egg yolks with 50 g sugar and flour. Pour in the boiling milk and stir.

Return to cook until thickened. Allow to cool.

Preparation of Coconut Milk:

Cream the soft butter with the remaining sugar until the mixture is foamy. Add the coconut, egg and rum. Beat until combined.

Make the cake:

Unroll the puff pastry on a baking sheet. Mix both preparations and spread over the dough. Get the beans!

Cover with second dough ball, pressing with the tines of a fork to seal the edges.

Brown the dough in a beaten egg, draw patterns on it, and poke holes in a few places to prevent it from puffing up.

Bake at 200° for 25 minutes.
