What lies behind a magnificent glass of champagne? We often ask ourselves this question when we observe the chain of bubbles rising towards the edge of the crystal in the light. Yet we rarely capture the time, patience, work and creativity that went into that moment of joy. Every year, Dome Perignon reveals this through an event called “Révélations”.
Led by Chef Vincent Chaperon, artists, creators, chefs and sommeliers from the Dom Pérignon Society came together to discover the secrets of the Dom Pérignon Society, an exclusive club born in Italy twenty years ago and which today has 109 members from all over the world. The creation process of the iconic champagne has always been known as “vintage only”, that is, only vintage wines are produced.
This year’s appointment, held in Barcelona, coincides with the presentation of two new vintages, crafted through aging time (a practice that is always present at the Maison) and united by touch, making them wines of extraordinary texture. Dom Pérignon Vintage 2015 and Dom Pérignon Vintage 2006 – Plénitude 2 offer a unique experience at Ricardo Bofill’s iconic La Fábrica. It is also the occasion for the opening of Trace, the first exhibition open to the public, which attests to Pré-Assemblages, the name of the creative process when intuition in the vineyard and at the first tasting is transformed into an intention of meaning and “vintage” style. The exhibition, which interprets the creative phases that Chef Vincent Chaperon has gone through, is documented by a group of talented artists and various artworks (drawings, photographs and texts), and will continue to be open to the public from July 10 to 14, 2024 at The Theatre. The event combines different sensory experiences. The dinner was born from a creative dialogue between the chef and star chefs Albert Adrià and Niko Romito, who explored the dominance of Dom Pérignon Vintage 2015 and Dom Pérignon Vintage 2006 in the dishes – Plénitude 2: touch, the texture of the wine.
