We start another real summer week with a thick corn and bacon stew, then continue with a slightly different but equally delicious lunch – grilled corn tortillas with rice, beans and sausage. The menu for this week also includes grilled cheese and veggie sandwiches, egg and broccoli muffins and shrimp fried rice, while the weekend starts with a simple salad followed by our favorite Italian classic – Saltimbocca alla Romana. Corn doesn’t have to be grilled or boiled, you can also make a great stew with it. Use corn on the cob, or, failing that, frozen or canned corn, bacon, potatoes, a few extras, and a thick, creamy, delicious stew could be your new summer favorite.
Tuesday
Tacos are always a great quick and easy idea for summer lunches, and these baked tacos with rice and chorizo are perfect to take to the beach or to work.

Wednesday
When the temperatures rise, sometimes all we want to do is make sandwiches. This grilled cheese and bacon side dish is easy and can be prepared entirely on a skillet instead of grilling it.

These broccoli muffins are a great idea for a quick lunch, or for breakfast, a work lunch, a beach snack, or dinner with a cup of yogurt. In addition to broccoli, you can also add chopped peppers, canned corn, grated zucchini, and other vegetables to the egg mixture.
Friday
Shrimp fried rice is a great idea for Friday when you don’t feel like eating risotto or pasta and want a tasty and not-too-complicated lunch. You can buy shrimps at the market or supermarket, they can be fresh or frozen.

One of our favorite summer lunches is canned fish salad. Firstly, because it’s delicious, and secondly, because all we have to do is open the can, boil an egg, and then mix all the ingredients in a bowl and season.

Sunday lunch doesn’t have to be complicated to begin with, and this Italian dish is proof of that. To make a delicious Saltimbocca alla Romana, you’ll need veal, ham, sage, and a few other ingredients, and the dish won’t take more than 30 minutes to prepare. Also, while the meat is cooking, make the side dish of your choice. It can be pasta, polenta, boiled potatoes, or baked potatoes.
