Banana Cake – The Callué Family of the West Indies

Banana Cake

raw material :

– 3 bananas

– 200g flour

– 200g softened butter

– 180g icing sugar

– 2 eggs

– 1/2 pack baking powder

– 2 tablespoons banana and vanilla rum

– Brown cane sugar

– Coconut/cane syrup

In a salad bowl, beat the eggs, add the powdered sugar and beat with an electric mixer until the mixture is white and foamy.

Soften the butter in a microwave for 30 seconds before adding it to the formulation.

Finally, add the flour and yeast and stir with a wooden spoon.

In a deep dish, mash the bananas with 2 tablespoons of rum and add it to the dough.

Pour the mixture into a buttered demoulding pan, sprinkle the surface with brown sugar and bake in a hot oven at 180° for 45 minutes.

Allow to cool and unmold; sprinkle with grated coconut and drizzle with 2 tablespoons of cane syrup.
