Preheat oven to 200°C.

Cover potatoes with foil and bake for 30 minutes or until tender.

Chop the bacon strips into small cubes and fry in a pan until golden brown.

Cut the baked potatoes in half lengthwise.

Carefully remove the pulp with a spoon until only 1 mm of pulp remains on the skin.

Mix the pulp with half the cheddar cheese, cream, salt and pepper.

Fill the potato shells with this mixture, cover with the remaining cheese and bake for another 5 minutes.

Remove them from the oven. Garnish them with bacon and onion chunks.
