The evening began with a potato and garlic velouté appetizer with parsley oil, bresaola and croutons, accompanied by Gloria Ferrer Sonoma Brut from Sonoma County, California.
The first course was an exquisite carbarone and lobster tartare with saffron and herb foam, pickled cucumber, beet salad and herring caviar. This dish was perfectly paired with the Prisoner Chardonnay from Carneros, California.
Next, guests will enjoy grilled secate, served with red wine risotto, roasted yellow squash, green peas and red mint sauce, paired with Prisoner Pinot Noir, also from Carneros.
For the main course, braised lamb cheeks were served with baby carrots, couscous, ratatouille and a rosemary and red wine sauce. This powerful dish was paired with The Prisoner Saldo Zinfandel from Carneros.
Finish off the Dush with a dark chocolate crème brûlée with 85% matcha cream, coffee crumble and pickled orange, paired perfectly with The Prisoner Unshackled Cabernet Sauvignon di Carneros.
