Yam Cod Bland

Recipe adapted from the recipe booklet N°3 Special FISH from Nestlé Antilles Guyana.

Suitable for 6 people.

Timake

  • 500 g dried cod
  • 1 Yam
  • 2 chopped onions
  • 1 pinch of chili
  • 4 cloves garlic
  • 1/2 bunch parsley
  • 3 sprigs thyme
  • 10 cl olive oil
  • 20 cl milk
  • Grated cheese
  • butter
  • Salt and pepper

Preparation of cod

■ Desalinate the cod with cold water 24 hours in advance and change the water regularly.

■ The next day, boil the cod in two consecutive waters, then in a pan with 10 cl of oil over low heat, chopped onion, without a little pepper and peeled garlic cloves.

■ Add the chopped cod to the spices and brown everything.

■ Peel the yam, cut into pieces and boil in lightly salted water. Drain and mash with milk using a fork. Add chopped thyme.

■ Mix the yam puree with the cod. Season with salt and pepper, then transfer the mixture to a buttered baking dish.

■ Sprinkle with grated cheese and a knob of butter. Bake in the oven for 20 minutes and serve warm.
