A breakfast, lunch and bakery that has won rave reviews in Westfield is preparing to expand into Morris County, where Kirshenbaum Baking Co. is putting the final touches on its second location.

Less than two years ago, husband and wife team Uyen and Jeff Kirshenbaum opened their first store at 62 Elm St. Their journey to open a bakery began through unfortunate circumstances during COVID, when they were both furloughed from their previous jobs in California.

Executive Chef/Owner Uyen has a renowned restaurant background with a focus on pastries, having worked at Ecole Lenôtre in Paris and becoming the first female pastry chef at Restaurant Guy Savoy in Las Vegas.

The first step in starting Kirshenbaum Baking Co. was “Jeff’s Cookies,” a delicious dairy-free and flour-free cookie that Uyen created for Jeff, who has dietary restrictions. The two initially began mailing these cookies to family and friends, and grew the idea into a company that ships Uyen’s signature cookies nationwide.

Shortly thereafter, the two moved to the East Coast and started their baking business, with plans to open a second location later this month at 22 Schuyler Place in Morristown. Kirshenbaum Baking Co.’s coffee service starts in the morning, with croissants, muffins, waffles and more, as well as some breakfast sandwiches and cheese hand-made pies.

Lunch highlights, all made with homemade bread, include sourdough pressed panini, egg salad and arugula on hara bread, and tuna salad in a croissant.

Of course, there are also a variety of cookies to choose from, such as salted chocolate chip, peanut butter chocolate, etc. Their pies (including key lime pie) are also very popular.

The 1,300-square-foot shop in Morristown features a modern design, including a coffee station and comfy couches for those who want to work quietly. The bakery will open in the last few days of August, and you can follow the account on Instagram @kirshbakingco.
